Learn the simple steps to brew green loose leaf tea without bitterness. Perfect water temperature, steeping time, and tea-to-water ratio for a refreshing cup every time.

Quick answer

To brew green loose leaf tea without bitterness, use water at 175°F (80°C), steep for 2-3 minutes, and use 1 teaspoon of leaves per 8 oz cup.

Why water temperature matters most

Green tea leaves are delicate. Boiling water (212°F) scorches them, releasing tannins that create a harsh, bitter taste. Keeping water below 185°F preserves the tea's natural sweetness and light vegetal notes.

If you don't have a temperature-controlled kettle, let boiling water cool for 1-2 minutes before pouring. The leaves should unfurl gently, not cook instantly.

Choosing the right leaf amount

Too many leaves overpower the cup; too few make it weak. A good starting point is 1 heaping teaspoon (about 2.5 grams) per 8 oz cup. Adjust by ½ teaspoon based on your taste preference.

Our Organic Sencha Green Tea uses large leaves that expand significantly when steeped, so you need less volume than with finely cut teas. The brisk, invigorating flavor comes through clearly without overloading the cup.

Step-by-step brewing guide

  1. 1. Heat the water: Heat fresh, filtered water to 175°F (80°C). If you don't have a thermometer, bring water to a boil, then let it sit for 1-2 minutes until the bubbling subsides. Boiling water is the #1 cause of bitterness—always let it cool first.
  2. 2. Measure the leaves: Place 1 heaping teaspoon (about 2.5 g) of green loose leaf tea into your infuser or teapot per 8 oz cup. Use a bit less if you prefer a milder cup; never exceed 1.5 teaspoons per cup.
  3. 3. Pour and steep: Pour the hot water over the leaves and steep for exactly 2 minutes. Set a timer—oversteeping is the second most common cause of bitterness. After 2 minutes, taste. If you want stronger flavor, steep 30 more seconds, but don't exceed 3 minutes total.
  4. 4. Remove the leaves: Immediately remove the infuser or strain the tea into your cup. Leaving leaves in hot water continues extraction and turns the tea bitter. If you're using a teapot without a built-in strainer, pour all the tea out before it sits too long.
  5. 5. Enjoy (and re-steep): Sip your tea plain or with a touch of honey. The same leaves can be re-steeped 1-2 more times—just add 30 seconds to each subsequent steep. Second and third steeps are milder and often sweeter, so don't throw the leaves away after one use.
